| Cucumber Relish |
A delicious and traditional Thai accompaniment to satays and very simple to prepare.
Ingredients
- 1 large Telegraph cucumber (or 2 Lebanese cucumbers)
- 1 medium red Spanish onion (or half if larger onion is used)
- 1/2 cup brown sugar
- 1/2 cup white wine vinegar
- 2 hot chillis (more or less to adjust the heat level to your taste)
Preparation
Thinly slice cucumber, onion and chilli then toss together in a bowl.
Combine sugar and white wine vinegar in a saucepan and bring to boil.
Leave the liquid to cool then pour over the cucumber mixture. |
